COX, WATSON - St. Kitts

I am researching the ancestors of my paternal Grandmother and have discovered the following in the 1851 UK Census:

William COX born c. 1816 Gloucestershire in 1851 was working in Portsea as a Railway Policeman
wife Matilda COX born c.1824 St Kitts
son William COX born c.1842 St Kitts
daughter Mary COX born c.1848 St Kitts

Since the children have taken their fathers surname and that Matilda was born in St Kitts I presume that William and Matilda married there. I would like to discover when they married and when their children were born. I would also like to research Matilda's family background and dicover her maiden name.

As the family were living in the UK in 1851 I am assuming that they left St Kitts sometime after Mary's birth in 1848. When did they sail and where did they land in the UK?

Can anyone help me with specific information or at least point me to where I can find records (in the UK?) that will help my research.

Any help would be appreciated.

I have recently discovered that Matilda remarried in October 1866 after being widowed by the death of William COX her first husband. This marriage in Hammersmith, England indicates that Matilda's christian names were Matilda Ann Chambers and that her father was William WATSON a planter in St Kitts.
