My Grandfather and my Mother made seasoning that can be used for any meat, the ingredients are as follows:

Finely chopped raw onion
The rest is added to taste

Oregano
Red chili peppers
Cayenne pepper
Black pepper
a bit of garlic powder
Turmeric
Seasoning salt

Mix all of this with the onion, put in jars and refrigerate this will last a long, long time.

If I have the time I will add a recipe for hot sauce as well.

Enjoy

Hi Cathy,

Thank you so much for the recipe, I'll certainly be trying it, and looking out for your chilli sauce.

The following are ingredients I used to rub into my chicken, leave it in the fridge over-night, then fry it and add it to an ovenproof dish with chicken stock, onions and tomatoes. Put it into the oven until cooked and serve it with rice and a side salad. It's been a long time since I did it so I can't put measurements down. To thicken the stock I mixed in corn flour.

Cumin powder
Curry powder
Dried Mixed Herbs,
Dried Thyme
Garlic powder (not too much as it's strong)
Ginger powder
West Indian Hot Pepper Sauce
Black Pepper
Tumeric
Salt

Think I'd better get back to doing it again, everyone misses it...

Once again. Thank you for your recipe.
I'll worry tomorrow...

Rosaline,

You are quite welcome and thank you for your recipe :)

Have you ever had potato pudding or pone?

I have those recipes also, but as you know none of these come with measurements, all by taste. I think we should all add those old recipes, souce is another one I love to make. I will add another soon.
