WATSON - St. Kitts

I am researching the ancestors of my paternal Grandmother and have discovered the following in the 1851 UK Census:

William COX born c. 1816 Gloucestershire in 1851 was working in Portsea as a Railway Policeman
wife Matilda COX born c.1824 St Kitts
son William COX born c.1842 St Kitts
daughter Mary COX born c.1848 St Kitts

Since the children have taken their fathers surname and that Matilda was born in St Kitts I presume that William and Matilda married there. I would like to discover William's occupation in St Kitts, when they married and when their children were born.

As the family were living in the UK in 1851 I am assuming that they left St Kitts sometime after Mary's birth in 1848. When did they sail and where did they land in the UK?

After the death of William COX Matilda remarried a Thomas Ralph CHANDLER on 7 October 1966 in Hammersmith, Middlesex. From the marriage certificate I have established that Matilda's birth name was Matilda Ann Chambers WATSON and that her father was a Planter.

Can anyone help me with specific information about the WATSON family. Any help would be appreciated.
